Fontainebleau’s Newest Restaurant was a Disaster

“The hype surrounding the opening of Cantina Contramar at Fontainebleau Las Vegas was massive. As the first U.S. expansion for world-renowned chef Gabriela Cámara, expectations were sky-high for this Mexico City seafood institution. Cámara, named one of Time Magazine’s 100 most influential people, partnered with award-winning architect Frida Escobedo to create a space that is meant to be a quiet, sophisticated counterpoint to the usual Las Vegas spectacle. The menu is designed to showcase “excellence in simplicity,” focusing on high-end ingredients and coastal Mexican traditions that Cámara made famous at her original Contramar and the late Cala in San Francisco. However, a beautiful room and a big name don’t always translate to a great meal. In this review, we’re breaking down our experience with some of the menu’s staples: the Coctel de Camaron, Fish Quesadillas, Guacamole, Fish Veracruz, and the Fideo Costeño. Despite the culinary pedigree behind the kitchen, the execution of these dishes left us wondering if the “simplicity” was leaning a bit too far into “disappointing” for the price point.
